preheat your oven to 425℉
start by chopping your sweet potatoes into 1 inch cubes, add them to a bowl and drizzle with olive oil and your desired seasonings. I use salt, pepper, chili powder and garlic powder, mix it all together so the potatoes are covered evenly
line a baking sheet with foil and place sweet potatoes on the baking sheet with breathing room in between, consider using 2 baking sheets if needed. this will give them the space to cook evenly
put them in the oven and bake for 25-35 minutes, until tender
while your potatoes are cooking, cook your ground beef on the stove, medium-high heat. i like to let it brown up a bit and then add 2 tbsp of taco seasoning
cook until browned all the way through, i think it tastes better to let some edges get real nice and crispy
when the beef and potatoes are done cooking its time to assemble your bowls. i like to add a bed of arugula under this but thats totally optional. I think it gives an otherwise soft palate of food a crunchy base.
add arugula (if using) topped with 1/2 cup of cottage cheese, 1/2 of one avocado, a scoop of ground beef and sweet potatoes, drizzle with hot honey, and enjoy!
