Add 1 tbsp sesame oil to a large pot over medium heat
Once warmed, add shitake mushrooms and cook until they begin to brown, remove from heat and set aside
Add 1 Tbsp of sesame oil and cook garlic until fragrant, about 1 minute.
Add 4 cups chicken broth and bring to a boil
Add turmeric, brown sugar, fish sauce, soy sauce, chili paste and red curry paste
Stir in coconut milk and bring to a boil
Add ramen noodles and cook for 2 minutes, until noodles are just soft
Serve immediately topped with green onions, sesame seeds and a soft boiled egg - ENJOY
