Equipment

  • 1 small saucepan
  • 1 baking sheet and parchment paper

Ingredients
  

  • 1 lb carrots
  • 4 tbsp butter
  • 3 tbsp honey
  • 4 sprigs fresh thyme
  • salt and fresh cracked pepper to taste

Instructions
 

  • Preheat oven to 425℉, line your baking dish with parchment paper and set aside
  • In a small saucepan over medium heat melt 4 tbsp butter, add 3 tbsp honey, 4 sprigs fresh thyme and whisk to combine. Once fully melted, remove from heat.
  • Trim tops of your carrots, leaving as much of the green top as you personally like (for aesthetic purposes only), and lay flat on the baking sheet. Leave space in between to avoid overcrowding.
  • Pour half of the honey thyme butter over the carrots, saving the rest for later. Season with salt and pepper.
  • Place baking sheet in the oven and roast for 20 minutes. Check half way through and rotate baking sheet to ensure they cook and brown evenly.
  • Remove from the oven and drizzle the rest of the honey thyme butter on the carrots.
  • Garnish with fresh thyme and enjoy!
