Trends are usually a trend for a reason and its because it’s good! This viral ground beef hot honey bowl has been making its rounds on the internet and I will tell you right now, for good reason. At first glance this combination doesn’t seem overly appetizing so I know what you’re thinking. But do me a favor and try it and I don’t think you’ll regret it.

I do like to change one thing up from the viral TikTok version and that’s adding a base of arugula to the bowl. I personally love arugula and it’s flavor profile. If you don’t, you can try adding romaine, iceberg, cabbage, or anything else you like. The combo of all these foods, while tasty, are lacking in texture. Adding a crunchy base takes it to the next level.

Another thing that can be switched per preference is the seasoning on the beef. If you prefer teriyaki or BBQ or even just something simple such as salt, pepper and garlic powder, do that ! As with any recipe, make it how YOU like it and you can’t go wrong.

This recipe works great to make ahead or even meal prep for your week. Just keep the beef and potatoes separate from the cottage cheese and avocado so that it can be warmed up! I intentionally make extra when we have this for dinner so me and my boyfriend can eat it for lunch in the coming days.

If you happen to not like cottage cheese you can you plain unsweetened greek yogurt for a similar vibe while still keeping your protein up. Feel free to add any other vegetables you like, or sub ground turkey or ground chicken for a different style bowl. The beauty of cooking is you can do whatever makes you happy!

Ingredients
  

  • 1 lb lean ground beef
  • 2 large sweet potatoes
  • 2 avocados
  • 2 cups low fat cottage cheese
  • 4 handfuls baby arugula optional
  • hot honey
  • 2 Tbsp taco seasoning
  • dash salt
  • dash pepper
  • red pepper flakes optional
  • olive oil

Instructions
 

  • preheat your oven to 425℉
  • start by chopping your sweet potatoes into 1 inch cubes, add them to a bowl and drizzle with olive oil and your desired seasonings. I use salt, pepper, chili powder and garlic powder, mix it all together so the potatoes are covered evenly
  • line a baking sheet with foil and place sweet potatoes on the baking sheet with breathing room in between, consider using 2 baking sheets if needed. this will give them the space to cook evenly
  • put them in the oven and bake for 25-35 minutes, until tender
  • while your potatoes are cooking, cook your ground beef on the stove, medium-high heat. i like to let it brown up a bit and then add 2 tbsp of taco seasoning
  • cook until browned all the way through, i think it tastes better to let some edges get real nice and crispy
  • when the beef and potatoes are done cooking its time to assemble your bowls. i like to add a bed of arugula under this but thats totally optional. I think it gives an otherwise soft palate of food a crunchy base.
  • add arugula (if using) topped with 1/2 cup of cottage cheese, 1/2 of one avocado, a scoop of ground beef and sweet potatoes, drizzle with hot honey, and enjoy!
