I didn’t even like carrots until I made them this way, I’m telling you these are worth the hype! This recipe is quick and easy, and comes together with only 4 ingredients. The honey and thyme come together to make the best sweet and savory side dish to pair along with dinner- sure to be a crowd pleaser.
Certainly not necessary to leave the green tops on, but I think it looks cute so I keep them on purely for aesthetic purposes. You can peel the carrots if you wish or keep the skin on for added fiber, but make sure you wash the carrots well. Here’s a link to the peeler I use when I opt for that route!
To make sure you get a good roast on your carrot you want your oven temperature up high – 425 degrees F is best. You want them to be the perfect level of soft and tender with some golden crisp.
You’ll want to lay the carrots flat on a baking sheet covered in parchment with some breathing room for each prior to baking. This will help them roast evenly. Generously coat them in the decadent honey thyme butter and let your oven get to roasting!

Honey Butter Thyme Glazed Carrots

Experience the perfect balance of sweetness and savory with our Honey Butter Thyme Glazed Roasted Carrots. Tender carrots, roasted to perfection and coated in a luscious blend of honey, butter, and aromatic thyme, create a mouthwatering side dish.
Preheat oven to 425℉, line your baking dish with parchment paper and set aside
In a small saucepan over medium heat melt 4 tbsp butter, add 3 tbsp honey, 4 sprigs fresh thyme and whisk to combine. Once fully melted, remove from heat.
Trim tops of your carrots, leaving as much of the green top as you personally like (for aesthetic purposes only), and lay flat on the baking sheet. Leave space in between to avoid overcrowding.
Pour half of the honey thyme butter over the carrots, saving the rest for later. Season with salt and pepper.
Place baking sheet in the oven and roast for 20 minutes. Check half way through and rotate baking sheet to ensure they cook and brown evenly.
Remove from the oven and drizzle the rest of the honey thyme butter on the carrots.
