Easy to whip up on a rainy week night for dinner and only uses one pot! You can throw this soup together with only 10 ingredients and it heats up well the next day too.
Zuppa Toscana is arguably my favorite soup at Olive Garden and while their unlimited soups are hard to beat, this recipe gives it a run for its money.
The spicy italian sausage, creamy broth and fresh kale come together to make the best cozy dinner. It is such a perfectly well rounded soup with protein, veggies, starch all in one it’s great just served alone, or you can whip up some garlic bread like I did.
Prep is easy and just includes chopping your onion, garlic, kale and potatoes. The soup is made all in one pot so your dishes will be minimal, and come on, after a long day a sink full of dishes is the last thing any of us need.
If you don’t want the soup spicy, opt for mild or sweet Italian sausage instead. However, the spicy sausage gives it a perfect bite!
If you somehow manage to have leftovers, or if you’re prepping this ahead of time, this soup can be frozen! It will keep i the freezer for about a month if stored in an airtight container.
