Spicy Coconut Curry Ramen
This spicy coconut curry ramen is so quick and easy but packed with flavor. You can whip this meal up in 20 minutes and it tastes better than a restaurant. You can throw it all together in one pot and avoid dishes so you can relax and enjoy your delicious dinner in peace.
Feel free to add more or less chili paste to adjust the spice level and just have fun with it!

2 tbsp sesame oil divided 4 ounces shitake mushrooms sliced 4 cloves garlic minced 5 cups chicken broth low sodium 1 tsp turmeric 1 tsp brown sugar 1 tbsp fish sauce 2 tbsp soy sauce low sodium 1 tbsp chili paste 2 tbsp red curry 1 can full fat coconut milk 14 oz 2 packages ramen noodles 8 oz For serving sesame seeds green onions finely sliced 2 soft boiled eggs
Add 1 tbsp sesame oil to a large pot over medium heat
Once warmed, add shitake mushrooms and cook until they begin to brown, remove from heat and set aside
Add 1 Tbsp of sesame oil and cook garlic until fragrant, about 1 minute.
Add 4 cups chicken broth and bring to a boil
Add turmeric, brown sugar, fish sauce, soy sauce, chili paste and red curry paste
Stir in coconut milk and bring to a boil
Add ramen noodles and cook for 2 minutes, until noodles are just soft
Serve immediately topped with green onions, sesame seeds and a soft boiled egg – ENJOY
