Avocado toast is hands down my favorite thing to eat for breakfast. This specific recipe makes it into my morning routine at least once a week. The fresh cucumber and flavorful feta makes for the most delicious healthy and easy meal to start the day!
Start by spreading your avocado on your toasted sourdough. Having a perfectly ripe avocado is key in making the best avo toast. It should have that gorgeous green color still while being soft and spreadable, even with a spoon! The amount you want on your toast is fully up to you, cake in on their if you want, their are certainly days I slap an inch thick on mine!
Thinly slice an english cucumber and add a layer on top. The cucumber adds a perfect crunch and makes this toast taste so fresh and clean. Add as few or as many as you want- again it’s your toast, no one elses! I usually press the slices into the avocado a little so that they “stick”, this helps when you eat your toast for the cucumbers not to slide off.
Heres where I usually salt, pepper and red pepper my toast. Feel free to omit the red pepper flakes if you don’t want it spicy but I think it adds the perfect spice and flavor. Add any other seasonings you like at this point too. Some “everything but the bagel” seasoning is always delicious as well. Don’t add too much salt, the feta does a good job of adding that savory salty flavor.
Now, add your feta and micro greens (or sprouts!) and take a step back and admire your masterpiece. Of course I know avocado toast is a simple easy recipe that might just sound self explanatory, but if you’re anything like me, getting some inspiration and new ideas is fun.
