Quick & Easy Dan Dan Noodles

Dan dan noodles are savory, a little spicy, and full of bold flavor without feeling heavy. This is my at home version that hits all the same notes but is much easier to pull together on a weeknight.

The sauce is really the star here. It is rich, salty, nutty, and just spicy enough. I love how it coats the noodles and clings to every bite. Once you mix everything together, it turns into that perfect glossy sauce that makes you want to go back in for one more forkful. It is comforting but still exciting, which is my favorite kind of meal.

I usually make these with ground pork or ground turkey, depending on what I have on hand. The meat cooks quickly and soaks up all the flavor from the sauce. Add in garlic, ginger, and chili crisp, and suddenly your kitchen smells incredible. This is one of those meals where the aroma alone tells you it is going to be good.

I like to use a chewy noodle here, but honestly whatever noodle you love will work. This recipe is forgiving and flexible. You can adjust the spice level up or down, add extra greens, or throw a jammy egg on top if that is your thing.

This is the kind of dish I make when I want something satisfying but not complicated. It feels restaurant worthy but still doable at home. Big bowl, lots of sauce, and no leftovers if you are lucky. Dan dan noodles are bold, cozy, and always a good idea.

20 minute Dan Dan Noodles

These easy dan dan noodles are savory, slightly spicy, and full of bold flavor. A quick noodle dish with rich sauce and ground meat.

Ingredients
  

  • 3 tbsp EVOO
  • 1 tsp sesame oil
  • 1 pound Ground Chicken
  • 2 tbsp Shaoxing Wine (or dry sherry)
  • 1 cup Chicken Broth
  • 3 tbsp Water
  • 3 tbsp Cornstarch
  • 2 tbsp Chili Paste
  • 2 tbsp White Sugar
  • 1/2 cup Soy Sauce (low sodium)
  • 1 tbsp Oyster Sauce
  • 1/2 cup English cucumber (julienned)
  • 3 cloves Garlic (minced)
  • 4 Scallions (sliced)
  • 3/4 cup Bean Sprouts (fresh)
  • 1 /2 Shallot (diced)
  • 6 oz Chow Mein Noodles

Instructions
 

  • Mix together the chicken broth, soy sauce, oyster sauce, shaoxing wine, sesame oil and sugar in a bowl and set aside
    2 tbsp Shaoxing Wine, 1 cup Chicken Broth, 2 tbsp White Sugar, 1/2 cup Soy Sauce, 1 tbsp Oyster Sauce, 1 tsp sesame oil
  • Mix together the water and cornstarch in a small bowl, set aside
    3 tbsp Water, 3 tbsp Cornstarch
  • In a large skillet over medium-high heat, add 2 tablespoons EVOO and cook ground chicken until cooked through (about 5 minutes)
    3 tbsp EVOO, 1 pound Ground Chicken
  • While chicken is cooking, cook noodles according to package instructions and set aside
    6 oz Chow Mein Noodles
  • Add the minced garlic, shallot and chili paste to the pan with the chicken- cook until fragrant, about 1 minute
    2 tbsp Chili Paste, 3 cloves Garlic, 1 /2 Shallot
  • Pour the sauce into the pan and stir to combine, bring to a simmer
  • Slowly add the cornstarch mixture, stirring to combine, simmer for 5 minutes
  • Plate noodles and top with sauce and chicken, garnish with sprouts, cucumber and scallions. ENJOY
    1/2 cup English cucumber, 4 Scallions, 3/4 cup Bean Sprouts
