It recently hit 70 degrees over the weekend where we live and that meant making a new fun summer cocktail to sip on our front porch. This coconut lime margarita hit the spot. The creamy coconut paired with fresh lime makes for the most fun, most refreshing drink. I happened to have a whole handful of limes on hand that I had no use for. I juiced them all and got to thinking what drink I could throw together with what I had at home. Let me tell you, these did not disappoint!
Fresh lime juice definitely beats pre-made but if pre-made is all you have, it still works! If using fresh, to get the most juice out of your limes I recommend using a citrus squeezer, the one I use I’ll link here. It’s a great tool because you can use it for lime, lemon, orange, grapefruit, you name it. And it gets the most juice possible for you!
These cocktails are best served fresh, but don’t worry, they come together in under 5 minutes so it’s easy to whip up whenever you want!
As written, this recipe does not make for a super sweet margarita. I think it’s delicious because the coconut milk and cream make it super smooth. But if you tend to like a sweeter drink, adding some agave or simple syrup makes for the perfect touch.
